Fix tapping the video not showing the controls on iOS 
The background touch handler sat on the overlay that fades the controls out,
so on iOS a tap on hidden controls never revealed them. Moves the handler to a
stable parent and gates the overlay with pointerEvents. Also fixes the playback
speed menu closing itself after 4s. Adds testIDs, unit tests and E2E coverage.
